Home-Made Junk Food: Garlic & Parmesan Potato Chips

As I mentioned on Tuesday, I’m a huge fan of Michael Pollan (see here). One thing I love about him is his belief that you can eat all the junk food you want, as long as your willing to cook it yourself. As a pregnant lady craving junk food I’m doing my best to make healthy alternatives to satisfy my cravings at home.
During a recent potato chip craving I decided to revisit this recipe from Laloosh and they totally hit the spot.

Parmesan & Garlic Potato Chips
– 1 large potato – olive oil cooking spray/or a drizzle of olive oil (you’ll only need a little bit) – 3 tbs parmesan cheese – 1 tbs garlic powder – 3 tbs chives (optional) – 1 tsp kosher salt
Pre-heat oven to 400 degrees. Slice potatoes into very thin slices and toss with all of the ingredients listed above. Place the potato slices in a single layer on a baking sheet and bake for about 20 minutes, until golden. Enjoy!
